Sheet Pan Kielbasa and Potatoes

Ingredients 1 1/2 pounds small Yukon gold potatoes 1 medium yellow onion 1 pound Polish kielbasa 2 tablespoons olive oil, divided 2 tablespoons dijon mustard 1 tablespoon apple cider vinegar 1 tablespoon brown sugar 6 cloves garlic, minced 1 cup sauerkraut, drained and squeezed out 1 cup mozzarella cheese, shredded salt and pepper, to taste Preheat the oven to 425 degrees. Line a large rimmed baking sheet with aluminum foil, and set it aside.
