One of the joys of working in schools is the excitement of the start of a new school year! Every year we get a chance to start fresh with shining clean buildings, new supplies and equipment, a new staff member or two, and a few new students. Extension Canning tomatoes is a great way to preserve a good garden harvest or excess store purchases, but if you’re leaving the skins on, you might be risking both flavor and food safety, says Kansas State University food scientist Karen Blakeslee. Blakeslee emphasized the importance of following recipes that have been researched to determine safe processing.

Many Kansas gardeners may already know that extending the year’s harvest into fall means planting many crops that would make a tasty mix. “Radishes, spinach, turnips, mustard, lettuce and other leafy greens can be planted from mid-August to early September, extending the harvest into fall,” said Cynthia Domenghini, a horticulture expert with K-State Research and Extension.
